I have always been in love with both sweet potatoes and avocados, but this recipe takes things to the next level. I am not entirely sure how I came up with this bomb of flavor, but I promise you it is unreal and super easy to make.
-1 Sweet Potato
-Veganaise Mayo or Avocado Mayo
(You can use regular mayonnaise but I prefer vegan or avocado)
-1 Lime (fresh lime juice makes this taste so much better)
-Lemon olive oil
-First bake your sweet potato and allow it to completely cool
-Once cool, peel the top off of your sweet potato and then cut slits into the top of the sweet potato.
-Cut your avocado into slices, then stuff the slices into the slits of your sweet potato.
-Put the stuffed sweet potato back into the oven to heat the potato and avocado while allowing the two to melt together.
-While the potato is in the oven, combine mayo, lime juice, a drizzle of lemon olive oil and chili powder. Mix this all together until all the ingredients are combined and the mayo is no longer lumpy (haha sorry I hate that word).
*pro tip* this chili lime sauce is so good on EVERYTHING
-Once the potato is heated, pull it out of the oven.
-Pour the chili lime sauce on top of the potato, and top it with pumpkin seeds for another kick.
-This recipe is alarmingly easy and so DANG delicious. ENJOY!
