One day I was searching for new recipes and I came across an Asian peanut sauce. The recipe looked so good, but there were a couple ingredients in the sauce that I typically try to stay away from for health reasons. After some experimenting, I created my own Skinny Peanut Sauce. This sauce goes great with any Thai inspired dish and it is especially great with chicken. Below is the sauce recipe and my favorite dish to pair it with! Enjoy and happy cooking!
Skinny Peanut Sauce
3 tbsp avocado oil
3 tbsp rice wine vinegar
1 tbsp coconut aminos*
2 tbsp PB2 (powdered peanut butter)
1tbsp squeeze ginger
1 tbsp squeeze garlic
1 tbsp sesame oil

After creating this sauce I came up with a Thai Chicken Power Bowl. This is my healthy take on a Thai noodle bowl and it is SO easy.
INGREDIENTS:
-Spaghetti Squash
-Steamed Brocoli
-Grilled or Baked Chicken
-Skinny Peanut Sauce
-Sesame Seeds
Put these into a bowl, top with Skinny Peanut Sauce, sprinkle with sesame seeds and ENJOY!
